90% Pineau d'Aunis and 10% Gamay, from a vineyard planted in 2010 on flinty clay. Manual harvesting in sub-ripeness to maintain the tangy and peppery expression of the grape variety. Yield 35 hl / ha. Vinification: semi-carbonic, maceration 10 days, whole harvest, indigenous yeasts, no punching, little reassembly, just a light watering of the hat. No intervention, 3 months aging in fiber vats, assembly juice press and juice of gout. 1.5 g / hl of sulfur on setting. Certified organic.
