The base wine was pressed directly and fermented and aged in stainless steel. Unlike Mathieu, the past proprietor did add sulfites at the time of vinification (none have been added since). A méthode champenoise secondary fermentation was made with a four gram dosage. Each bottle is manually disgorged to order.
