J. Lassalle, "Préference" Brut (MARFA)
This is Lassalle’s Champagne. The wine goes through malolactic fermentation to soften its acids. Then spends four years aging on the lees before disgorgement. That is a lot of care and commitment for a non-vintage cuvée. The result is a tightly stitched champagne that’s incredibly clean and refreshing. A glossy pearl texture and subtle acidity.
