Dolores Cabrera La Araucaria Rosado (MARFA)
La Araucaria Rosado comes from the island of Tenerife, the largest of the Canary Islands. For this rosé, Dolores uses grapes from 100-year old vine Listan Negro, an indigenous variety grown in the shadow of the volcano Monte Tiede, Spain’s highest point. After destemming, she allows the grapes to macerate on the skin for twelve hours before bleeding off the free-run juice which she then ages seven months on the lees. The combination of the age of the vines and the volcanic soil results in a wonderful spicy bouquet of black peppercorns and violets and flavors of both red and black fruits.
